A favorite Quiche recipe

Crustless Spinach, Onion and Feta Quiche creation of the day πŸ˜‹

I’m a big fan of savory comfort foods and this Spinach, Onion and Feta Crustless Quiche is really good. It is very easy to make so a little chef can help as a activity 😊… plus, it reheats well in the microwave! (Only If you must I am not a fan of microwaved food ) Add a salad for a quick light lunch or dinner!
Most time consuming part of this is the spinach bug check but if you buy the bodek kind you are good to go .

Ingredients

1 large yellow medium onion plus a small red onion , diced

1 bag of fresh Baby Spinach , checked for bugs ! ( Bodek or checked by daylight or kosher bug lamp checker )

4 large eggs
1 1/2 cup flour or matza meal on Pesach
1 tbs coconut amnios or soy sauce

1/2 tsp baking powder

pinch cayenne pepper (optional)

1 1/1cups non fat milk

1 1/2 cup feta cheese

Directions

Preheat oven to 400F

Lightly grease a 10-inch quiche/tart pan (or a pie plate)

In a medium frying pan, heat a little vegetable oil (or cooking spray) on medium/high heat and add the diced onion. Cook the diced onion until translucent and tender.

Add in fresh spinach and cook until just wilted. Set aside to cool for a few minutes.


In a large mixing bowl, whisk together the eggs, (Egg Beaters equivalent if using that), flour, baking powder, and cayenne pepper if desired. Whisk in the milk and then stir in spinach-onion mixture.

Pour quiche base into prepared pan. Top with feta cheese or mozzarella to entice kids πŸ˜‰

Bake for 30 minutes, or until center is set and the outside edge is golden brown.

Let set for 5 minutes, then slice and serve.
